- 6-8 white rose or red potatoes
- 6 hard-boiled eggs
- 2 tablespoons green onions
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 tablespoon yellow mustard

Hello everyone! Jillee’s daughter-in-law Kaitlyn here! I’m feeling a great deal of responsibility writing today’s blog post because it’s a family recipe from Jill’s mom that has been in the family for generations! Hopefully I can do it justice! Today I’m talking potato salad. I’ve always liked potato salad but it wasn’t until I tried this recipe that I fell in LOVE with potato salad. I remember Jill making this recipe along with the spare ribs I linked to above, while my husband and I were dating. It was then I knew I really wanted to marry into the Nystul family. ;) This potato salad really is that good.

While it is a bit labor-intensive with the boiling, peeling, and chopping……it’s very simple to put together and SO worth it!!! :-)
(UPDATE: Using your instant pot to cook the potatoes and eggs is SO much faster than boiling and doesn’t heat up the kitchen!)

The World’s Best Potato Salad
Ingredients
- 6-8 white rose or red potatoes
- 6 hard-boiled eggs
- 2 tablespoons green onions
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 tablespoon yellow mustard
Boil the potatoes until they are just soft – you don’t want them to be too mushy.
Let them cool, then peel them and cut them into bite-sized pieces.
Hard boil the eggs, (I like to use this method) let cool, then dice.
Chop the green onions.
Mix the potatoes, eggs, onions, salt and pepper in a bowl. Chill in the fridge until just before you’re ready to serve.
