Feingold Chicken Enchiladas

Creamy Chicken Enchaladas

Chicken Enchiladas

16 Tortilla land fresh Tortillas
2 chicken breast
1/2 container of Horizon Organic Sour cream
1 cup Tillamook Cheddar cheese
1/2 cube organic butter
1/3 block of Philadelphia cream cheese
Pacific brand cream of chicken soup (it's in a carton)
small can diced green chills (you can leave these out if you are Stage one or concerned)


Brown tortilla's in skillet….barely brown them.  Set aside
Dice and brown chicken in skillet or you can boil chicken breast and chop to little pieces

Mix the remaining ingredients and then add chopped chicken.

Butter bottom of 9x13 (with coconut oil or butter) and assemble filling into tortilla, roll up and line into pan.

I leave a bit of sauce for the top, and top with cheese and olives!

Bake for 20 min at 350, covered with foil!  Uncover for the last 5 minutes:)


Clean, Stage one, (except chilies which you can leave out).
