Crock Pot Sweet and Sour Chicken

What You’ll Need:
  • 4 – 5 Boneless Skinless Chicken Breasts
  • Optional: Cooked Rice makes the perfect side!
For the Sauce:
  • 3/4 cup Water
  • 3/4 cup Sugar
  • 1/4 cup Apple Cider Vinegar
  • 2 tbsp. Corn Starch
  • 8 oz. canned Pineapple Tidbits
  • 1/2 tsp. Paprika
  • Optional: Finely chopped white onions
  • Optional: Chopped scallions for garnish
Cook chicken in crock pot on high for 3 hours {covered}.  After 3 hours, drain juices from crockpot. (or whatever your preferred method is for cooking chicken breasts in crock pot)

In a small bowl, combine Corn Starch with the liquid pineapple juice you’ve drained from the can of pineapple tidbits.

In a large saucepan, heat the Water, Vinegar, and Sugar to a boil.  Reduce heat to low, and gradually stir in the white Corn Starch/Pineapple Juice mixture.
Raise heat to medium, continue stirring, and let thicken.
Add in the pineapple tidbits, and sprinkle sauce with 1/2 tsp. Paprika, and stir.
Pour sauce into crockpot, stir, and allow to simmer for 45 more minutes.
Serve with whatever suits your fancy!
