1 tsp of salt
1 tsp pepper (½ for low oxalate http://lowoxalate.info/)
1 tsp garlic powder
½ tsp onion powder
½ tsp thyme
¼ tsp paprika
¼ tsp cayenne pepper
2 TB butter
2 TB olive oil
½ cup chicken broth
4 TB fresh lime juice
4-6 boneless skinless chicken breasts
Still playing around with this one - not worrying about it being Feingold or anything like that yet. 1st time I made it I sauteed the chicken in butter then seasoned it on both sides and just dropped some lime juice on it when I served it. It was delicious! Today I just rinsed the chicken, seasoned and baked it. It looks good (see pic) and broccoli seems to be a good side for it. Last time we had cheese sauce on the broccoli and this time it will just be steamed and then maybe a little butter. I cut down the cayenne and the paprika (depending on the quality) for spicy-ness because we can't have it too spicy. This recipe is so easy to manipulate for what you need and it really is a "we can eat this once a week" thing.
