I used to pour through people's cookbooks for recipes while babysitting. That was before we had this fancy schmancy Internet doo hicky. So I've had my waffle recipes for at least a million years.
4 TB unsalted butter
1-3/4 cups all purpose flour
1-1/2 tsp double acting baking powder
1 cup plain yogurt
2 large eggs
1 cup frozen blueberries
1/4 tsp baking soda
1/8 tsp ground cinnamon
1/3 cup sugar
1 cup milk
1 tsp vanilla
Preheat waffle iron. Melt the butter, reserve.
In a large bowl whisk together the flour, baking powder, baking soda, cinnamon and sugar.
In another bowl vigorously whisk together the yogurt, milk, eggs and vanilla.
Gradually pour the liquid ingredients over the dry whisking until just combined.
Fold in the blueberries and melted butter.
Lightly spray iron if needed.
Pour about 1/2 cup batter in a circle around the center.
Cook it til it's done!
